30 May Eat | Botanist Dining

Hello everyone, welcome to my new blog series of designer restaurants that gives you full review of restaurants with amazing interiors and aesthetics in my city – Vancouver.  On top of my list is the newest and hottest restaurant in town – Botanist in Fairmont Pacific Rim. I’m always drawn to all restaurants designed by Ste Marie Design such as Kissa Tanto, Mosquitoes, Homer St Cafe and Osteria Savio Volpe etc. I personally love their sophisticated design to balance simplicity with glamorous details. The design is always modern but not too minimalism. It got the upscale New York vibe with dramatic touches while overall the aesthetics remain humble and sleek.

If I were to bring a friend to try somewhere new, very likely I will end up at one of these restaurants, even each restaurant is slightly different from one to another, the ambience is always perfect for date nights and small gatherings.

This time we chose to celebrate our girlfriend’s birthday at Botanist and we did not get disappointed. Don’t let my pictures fool you, the entire restaurant was fully booked on the Saturday night and I was just able to do a few quick snapshots before guests were seated. Given the space is huge with taking the entire second floor of the hotel, it’s divided into different sections of dining areas and each area is equally beautiful. We were seated close to the kitchen by the curved banquette and marble table but everywhere is instagrammable with the lively lush and muted blush interiors. The environment is cozy with live music and natural light coming through the floor to ceiling windows.

Ambience wise is absolutely perfect to me and now let’s get to the FOOD part. We ordered a few sharing plates to start.

My favourite hands down is the Tagliatelle, the pasta was perfectly al-dente and sauce was rich and creamy. The other two plates were very flavourful and delicious too. I’m impressed with the choice of ingredients and options not like the typical hotel dining – boring! It reminds me of Kissa Tanto, that slightly out of the box menu is refreshing and I strongly encourage more varieties in our Vancouver food scene.

Our server told us the MUSTARD-CRUSTED CHICKEN is their signature dish created by the head chef and that turned out to be my favourite dish of the night too. I wouldn’t order chicken 99% of the time when I do fine dining and actually I ordered the HERB-CRUSTED LAMB SADDLE for myself instead. The chicken my friend ordered was AH-mazing…crispy mustard crust on top kept the meat tender and juicy, it’s one incredible dish.  My lamb was also tender and flavourful.  My other girlfriends also enjoyed their fish main courses too.

We skipped desserts but I would love to bring my husband back to try out their tasting menu soon. Overall I’m impressed with the classy decor, twist of typical West Coast menu and friendly service.
